It varies for the first sharpen with the Novara, depending on the blade's condition and the quality of the steel — on average about five minutes, as the edge first needs to take on your chosen 15° or 20° angle. After that, thanks to the fixed grinding angle, just a few rolls back and forth are enough to resharpen.

For wider blades where the cutting edge sits higher than the disc, raise the sharpener on a suitably thick cutting board so the edge lines up within the radius of the diamond grinding disc.
